I just have a lot of Katara feels, okay? Me too! I agree so hard with everything you said. Katara is not just a wonderful character, she's a wonderful person. Sometimes I actually wish I knew her IRL. My favourite Katara moment...probably in The Puppetmaster, when she overpowers Hama's bending and realises her own power as a bender. I love the contrast between how childish she looks when begging Hama to stop bending her blood, and how mature and confident she looks when she starts fighting back. At one point her face reminds me a lot of Kya's.

To be honest, I wasn't a big fan of Katara for the first season and most of the second - not until she lead everyone out of the desert. She's pissed me off (how she snapped at Aang during the "Waterbending Scroll" episode and how she snapped at Toph during "The Chase" ), but I really liked her character development in the third season. I think my biggest beef was how the writers/creators handled her bending. She went from barely being able to bend a water-whip to the best Waterbender the world has seen in generations, in the span of a few weeks. Seriously? That is piss-poor writing, to the point where they make her a bit of a Mary Sue (she is able to surpass Hama, who created the most powerful bending the world has know - and she does it only minutes after learning the skill).
But throwing all that aside, her character has amazing potential. She is strong, defiant, bossy, stubborn and yet she is also compassionate and motherly. She is powerful, never a damsel in distress, yet she is also very feminine and sexy. As long as she is not portrayed as uber powerful in fics (like they suggest she is in the series), I enjoy her. I also enjoy her temper, when written well.

Yeah, I've never seen Katara as a fighter. I'm sure she's better than your average girl since she grew up in the South Pole and most likely received some training, but Katara's powers lie in her bending and her compassion.
Oh, I totally remember our weekly LoK discussions: "Waterbending needs to be nerfed!" And that's why I am soooooo glad they didn't make Korra some kickass Waterbender. She's the Avatar, after all, and it seems her true strength is fire, oddly enough. But back to the powerfulness of Waterbenders - I do hope they explain the psychic Bloodbending, and why Katara wasn't there at Yakone's trial.
And now back to Katara again... I really enjoy portraying her as someone who cannot easily be broken, someone willing to sacrifice herself for others, and who can even sacrifice her morals if it is for the greater good. But at the same time I like to show her vulnerability, the chinks in the armour, because as strong-willed and instinctual Katara is, the moment she has time to think on her actions is what becomes her undoing but is what also makes her so very human and relatable.

Whose main role seems to be to take care of the Avatar. Again. It's like, ultimately, Katara's whole function in life was to be the Avatar's caretaker. And baby-maker. But I peg that to Bryke's apparent fascination with that particular role in romantic pairings. Mama Mako was a running joke, but he really was Bolin's parental figure, he was the one to go and make money for the Fire Ferrets, he was the one spearheading Korra's search (romantic interest aside, it really could be read as 'bird has fallen off the nest, must get bird back on nest', at least to himself at that point.); then The Promise has Mai being very motherly and 'you're staying up past your bedtime, aren't you' to Zuko. Idk. It irks me, this trend (which may not be there at all? I could just be reading too much into it).
But it especially irks me when Katara, complex, brave, bossy, in-the-think-of-things, take-charge Katara seems to have retreated somewhere to be 'Aang's wife, mother of his kids and then, caretaker of his reincarnation'... it just bothers me. I don't doubt she was happy, and that she did it because she wanted to (and that she loved Korra as KORRA, not as Aang's extension, or anything), but it still feels so restricting of all of that fire she has. And, again, this is something I drop squarely on Bryke's shoulders.

Katara trained two Avatars in her lifetime. Two. And that, among other things, is why she is amazing.
